Five ingredients is all it takes: ground turkey, cayenne, cumin, garlic powder, and black pepper. Mix, shape, broil. The Cajun-inspired spice blend gives these lean patties real personality, with a slow-building heat from the cayenne and earthy warmth from the cumin.
Slide them onto buns with your favorite toppings. Pickled jalapeños, pepper jack cheese, and a smear of chipotle mayo would be right at home here.
Kitchen Tips
- Mix the spices into the turkey gently. Overworking ground turkey makes the patties dense and rubbery.
- Broil 5 minutes per side and resist the urge to press down on the patties. That squeezes out moisture you can’t afford to lose with lean turkey.
- If using extra-lean ground turkey breast, mix in a tablespoon of olive oil to keep the patties from drying out under the broiler.

Directions
Preheat oven to broil.
Spray a broiler pan with no-stick cooking spray.
Combine all ingredients in a mixing bowl and mix well.
Shape into 4 patties.
Place on broiler pan and broil for 5 minutes on each side.
Serve on hamburger buns.
