This pasta brings the color and the flavor in equal measure.

Strips of SPAM get sautéed alongside sweet corn, red and green bell peppers, and red onion until everything is tender and fragrant.

Meanwhile, heavy cream simmers down with chili powder into a lightly spiced, velvety sauce that coats every strand of angel hair.

Pile the SPAM and veggie mix on top, then finish with chopped fresh tomatoes and a scatter of cilantro for brightness.

Kitchen Tips

  • Don’t overcook the angel hair. It goes from al dente to mushy in seconds, so pull it a minute early and let the cream sauce finish the job.
  • The chili powder brings warmth, not fire. Add a pinch of cayenne if you want real heat.
  • Frozen corn works great here. No need to thaw it first; just toss it straight into the hot skillet.

Directions

In skillet coated with cooking spray, sauté corn, SPAM, bell peppers, and onion over medium heat 5 minutes or until tender.

Transfer mixture to bowl; keep warm.

To same skillet, add cream, chili powder, and pepper.

Bring to a boil; boil 5 minutes or until cream has slightly thickened, stirring occasionally.

Pour over pasta and toss well.

Spoon SPAM mixture over pasta. To serve, sprinkle with chopped tomatoes and cilantro.
