Ripe nectarines get blended with sugar and a hit of lemon juice, then frozen and beaten smooth for a silky, scoopable texture. The double-freeze method (freeze, break apart, beat, freeze again) is what gives this sorbet its creamy body without any dairy or special equipment.
Pile scoops of that bright, peachy sorbet alongside fresh blueberries and strawberries for a dessert that looks like it came from a restaurant patio. The lemon juice does double duty here: it brightens the nectarine flavor and keeps the fruit from browning during freezing.

Directions
Place nectarines, water, sugar and lemon juice in blender or food processor, cover and blend on high speed, or process, until smooth.
Pour int loaf pan, 9 X 5 X 3 inches.
Cover and freeze about 2 hours or until almost firm.
Break nectarine mixture into chunks into bowl.
Beat on low speed about 2 minutes or until smooth.
Pour into loaf pan.
Freeze about 4 hours or until almost firm.
Scoop nectarine mixture onto individual plates.
Arrange berries around mixture.
