This smoked potato salad takes classic American picnic fare and drags it through the smoker for a flavor upgrade nobody sees coming. Cold-smoked potatoes bring a campfire quality that swaps mayo-bomb into something grown-up and layered, especially when paired with briny capers and the citrus kick of lemon mayonnaise.

The preparation is almost embarrassingly simple. Smoke the potatoes whole, cool them completely, then cube and toss with sliced celery, green onions, capers, and just enough lemon mayo to bind. Cold potatoes are the key. Warm ones absorb too much dressing and turn gluey, while chilled spuds hold their shape and the dressing stays creamy.

Smoking the potatoes is the one step worth planning for. Use an oak or apple wood chip smoker box and give them 45 minutes to an hour at around 225°F (110°C), just until the skins turn bronze and fragrant but the flesh is still firm.

Kitchen Tips

  • Start with firm, waxy potatoes like Yukon Golds or red bliss. Russets fall apart when smoked and tossed.
  • Make your own lemon mayo by whisking 2 teaspoons fresh lemon juice and some zest into plain mayo.
  • Rinse the capers if they taste aggressively salty, then pat dry before adding.
  • Let the salad chill at least an hour before serving so the smoky flavor penetrates the whole bowl.

Variations

  • Swap capers for chopped cornichons or dill pickle relish for a different briny edge.
  • Stir in crumbled bacon or smoked trout for an even smokier, heartier salad.
  • Substitute Greek yogurt for half the mayo for a lighter, tangier finish.

Directions

In a bowl, gently mix together the potatoes, celery, onions and capers.
