Chunks of Italian sausage get browned with garlic and onions, then simmered in a thick tomato sauce loaded with mixed vegetables, oregano, basil, and a generous pour of red wine.
Everything goes into a casserole dish, gets topped with grated cheese, and bakes until bubbly and golden.
Serve it with crusty Italian bread to mop up every last drop of that rich, wine-kissed sauce.
Chef Tips
- Brown the sausage in batches so it actually sears rather than steams. Crowding the pan gives you gray, soft meat instead of caramelized edges.
- Use a full-bodied red wine you’d actually drink. If it’s not good enough for your glass, it’s not good enough for your sauce.
- Swap the canned mixed vegetables for fresh zucchini, bell peppers, and mushrooms when they’re in season for a serious upgrade.

Directions
Sauté Italian sausage in olive oil until meat is no longer pink.
Add onions and garlic and sauté until onions are soft.
Add tomato paste, tomatoes, vegetables and seasonings; simmer 15 minutes with sausage mixture.
Add red wine to tomato-sausage mixture and place in casserole dish.
Sprinkle cheese over top and bake at 350℉ (180℃) F for 20 minutes.
