Scandanavian Salmon Souffle

Ingredients

1 slice whole wheat bread
1/4 cup salmon, canned drained, flaked
1 each egg beaten
1/2 cup evaporated milk skim
1 tablespoon onion chopped
1 tablespoon celery chopped
1 tablespoon parsley leaves chopped
1 teaspoon lemon juice
1/4 teaspoon dill weed dried
1 dash black pepper
1/4 teaspoon worcestershire sauce

Directions

Preheat oven to 350 degrees F.

Coat small souffle dish with non-stick spray.

In bowl, break bread into small pieces.

Mix in remaining ingredients.

Pour mixture into prepared souffle dish.

Bake 35 minutes or until knife inserted in center comes out clean.

Coffee Pecan Muffins

I didn't have pecans, so I used walnuts instead. Light and fluffy, yet easy to make. Great muffins for every morning!
