Ground beef browns with chopped onions and green pepper, then gets mixed with tomato sauce and simmered briefly. Layer that saucy meat with cooked noodles and cubes of Velveeta, repeat, and slide it into the oven.
Forty minutes later you’ve got a golden, melty casserole that stretches and pulls with every scoop. It’s the kind of no-frills, belly-filling meal that never goes out of style.
Serves 4 to 6 and pairs with nothing more than a simple green salad.
Pro Tips
- Cube the Velveeta into small, even pieces so it melts evenly throughout the layers instead of clumping in one spot.

In a large skillet, brown meat; drain. Add tomato sauce, onions and green bell peppers;mix well.
Cover;simmer for 5 minutes.
Layer noodles, cheese, and meat mixture in a 1½ quart casserole; cover.
Bake @ 350℉ (180℃) for 40 minutes. Top with additional cheese, sliced, if desired.
