This casserole is a crowd feeder built from pantry staples. Two pounds of ground beef browned with onion and green pepper get mixed with canned green beans and undiluted tomato soup, then baked with a thick mashed potato cap that turns golden on top.

Using the tomato soup undiluted is key. It acts as a thick, concentrated sauce rather than a thin broth, coating the beef and green beans in a rich, tomatoey glaze that holds the filling together. Diluting it would make the casserole watery.

The mashed potato topping gets enriched with eggs before going on. Directions

Brown ground beef, onion and green pepper in a heavy skillet.

Add string beans and soup; mix well.

Bake for 30 minutes at 350℉ (180℃).

Add salt, pepper and eggs to mashed potatoes and spoon over casserole.

Return to oven for 15 to 20 minutes.
