Weeknight dinner doesn’t get much faster or smarter than this. Five ingredients, two pans, and roughly half an hour stand between you and a plate of pesto-crusted salmon with crispy potatoes.

A spoonful of basil pesto smeared over each salmon steak does triple duty: it seasons the fish, seals in moisture, and bakes into a fragrant, herby crust. No marinating, no fuss.

The potato trick is the real time-saver. A few minutes in the microwave gets them just tender inside, so they only need a quick toss in a hot, garlicky skillet to crisp up golden outside. That two-step shortcut gives you crunchy-edged potatoes without waiting 40 minutes for them to roast.

Pull the salmon the moment it turns opaque all the way through; a minute too long and it dries out.

Pro Tips

  • Microwave the potatoes only until just tender; overcooked, they’ll fall apart in the skillet.
  • Get the skillet good and hot before the potatoes go in so they sear instead of steam.
  • Spread the pesto in an even layer so it crusts without burning at the edges.

Directions

Heat oven to 400℉ (200℃).

Place potatoes in shallow 1-quart microwave-safe dish.

Cover with plastic wrap, venting one corner.

Microwave on HIGH 6 minutes until just tender.

Meanwhile, spread top of each salmon steak with pesto, dividing equally.

Place on rimmed baking sheet.

Bake until salmon is opaque throughout, 15 to 20 minutes.

While salmon bakes, in medium nonstick skillet over high heat combine oil and garlic.

Add potatoes. Pan roast, tossing, 5 to 8 minutes, until golden brown.

Season with salt and pepper.

Serve salmon with potatoes.
