Four ingredients and zero oven time. That’s all it takes to make these peanut butter crispy rice squares that kids demolish and adults sneak from the pan when nobody’s looking.

The brown sugar and corn syrup come to a boil together, then the heat goes off and the peanut butter gets stirred in. This order matters. Boiling the sugar first creates a sticky binding syrup, and adding peanut butter off the heat keeps it from scorching and turning bitter.

Press the mixture into the pan firmly with a buttered spatula or a sheet of waxed paper. Loose packing means crumbly squares that fall apart in your hands. You want them dense enough to hold together but not so compressed they lose their crunch.

Pro Tips

  • Work fast once you add the cereal. The sugar syrup stiffens as it cools and becomes impossible to spread evenly.
  • Butter your spatula or hands before pressing. The mixture is incredibly sticky and will coat everything it touches.
  • Let the bars cool completely before cutting. Warm bars smear and tear instead of slicing cleanly.
  • Store in an airtight container at room temperature. Refrigerating makes them rock hard.

Variations

  • Chocolate drizzle: Melt chocolate chips and drizzle over the top before the bars set for a chocolate peanut butter combo.
  • S’mores style: Stir in mini marshmallows with the cereal and top with a graham cracker crumble.
  • Trail mix bars: Add dried cranberries and sunflower seeds to the cereal for extra texture and chew.
