If ham-wrapped bananas baked in cream sounds strange, welcome to French cooking where sweet and savory collide without apology. This classic bistro appetizer pairs the starchy sweetness of firm bananas with salty ham, nutty Parmesan, and a generous dusting of paprika, then bathes everything in heavy cream and bakes until bubbling and golden.

The trick is using fairly unripe bananas. You want them firm enough to hold their shape in the oven, not soft and mushy. A slightly green-tipped banana has more starch and less sugar, which gives it a texture closer to a plantain when baked. Fully ripe bananas will collapse into mush under the cream.

Be generous with the paprika. The recipe says it and means it. Paprika provides a smoky warmth that bridges the gap between the sweet fruit and salty ham. A timid sprinkle disappears in the cream, but a heavy hand gives the dish its signature color and flavor.

The cream reduces in the oven, thickening into a rich sauce that clings to the ham-wrapped bundles while the Parmesan forms a crispy, golden crust on top. Serve at room temperature (not cold from the fridge) so the cream stays fluid and the flavors come through fully.

Pro Tips

  • Choose bananas that are yellow with no brown spots, or even slightly green at the tips
  • Wrap the ham snugly around each banana to keep them from unrolling during baking
  • Use a dish just large enough to fit the bananas in a single layer. Too much space means the cream spreads thin and won’t sauce properly
  • Hungarian sweet paprika works best here. Smoked paprika is a fine substitute for a deeper flavor

Variations

  • Use prosciutto instead of ham for a more refined, saltier wrap
  • Swap Parmesan for Gruyere for a more traditional French gratin topping
  • Add a squeeze of lime juice over the finished dish for a tropical-savory twist
