Ground almonds and cashews cook with evaporated milk and butter until the mixture thickens into a dense, fragrant paste.
Sugar goes in toward the end, dissolving into the warm, nutty base.
Spread it flat, let it cool, and slice into small squares. That’s it.
The texture lands somewhere between fudge and marzipan, with a richness that comes from all those ground nuts melting into the reduced milk.
Kitchen Tips
- Stir constantly while the milk reduces. Walk away for even a minute and it scorches on the bottom.
- Grind the nuts to a fine powder, not a paste. A few quick pulses in a food processor or spice grinder does the trick.
- For a festive touch, press slivered pistachios or edible silver leaf (vark) into the surface before it sets.
- Cut the squares small. Barfi is intensely rich and a little goes a long way.

Directions
Melt ½ stick of butter in a heavy skillet. Add milk. Stirring constantly, bring to a boil.
Low heat and cook until milk thickens.
Add nuts and sugar.
Stir.
Cook for 10 mins.
Turn off heat.
Pour mixture on to a flat dish and spread evenly with the back of a spoon.
Cool.
Cut into small squares.
