Pasta Sauce with Lemon and Garlic

Ingredients

1 teaspoon olive oil
2 cloves garlic peeled and minced
1/2 cup white wine dry
1/4 cup lemon juice
1 cup tomatoes stewed
1/4 cup basil
2 tablespoons parmesan, parmigiano-reggiano cheese, grated
1/2 teaspoon black pepper

Directions

In a skillet, heat oil over medium heat and add garlic until tender.

Remove from heat and pour wine.

Return it to the heat. Cook another 1 to 2 minutes, until wine has been reduced by half.

Stir in lemon juice and tomatoes, basil, Parmesan cheese, and black pepper.

Serve over cooked pasta.

Carol's Easy Meatloaf

I don't know how Carol came up with her meatloaf recipe but I want to thank her for it! It not only is incredibly delicious but is also soooo easy to make too. I hate to cook and this is a really great tasting meatloaf. My adult son is living with me now so I am cooking a lot more than I normally do and am really appreciative of any recipe that is easy to make and tastes great. Many thanks Carol! Elizabeth
