Retro microwave hamburger casserole with ground beef, cream of mushroom and chicken soups, rice, soy sauce, and crunchy chow mein noodles. Classic 1970s weeknight comfort food.

45 minThis is vintage 1970s cookery at its most unapologetic: ground beef, two cans of condensed soup, a splash of soy sauce to justify the “Oriental” label, and a topping of canned chow mein noodles for crunch. All of it, remarkably, from the microwave.
The technique matters more than you’d think. Browning the beef in the casserole dish first lets the rice absorb the fond during the long covered cook, so the finished dish has real savory backbone under the creamy soup base.
The rice goes in raw. It steams directly in the liquid, soaking up flavor as the meat and vegetables finish. Don’t swap for pre-cooked rice; the ratios won’t work.
Crumbled chow mein noodles scattered on top at serving time give the crispy contrast that keeps every bite from feeling uniform. Add them at the table, not during cooking, or they’ll go soggy.
Kitchen Tips
- Stir the meat halfway through browning so the outer layer doesn’t overcook while the center stays raw.
- Use long-grain white rice; short-grain or brown rice won’t cook through in the same time.
- Skip the MSG if you prefer; a teaspoon of Worcestershire sauce adds similar umami.
- Let the casserole sit five minutes after the final uncovered heat so the liquid thickens.

- Add a cup of sliced water chestnuts with the celery for extra crunch.

Directions
Crumble meat into a deep, 2-quart, heat-resistant, non-metal- lic casserole and heat, uncovered, in microwave 5 minutes or until meat is browned. Stir after half of cooking time.
Add remaining ingredients to meat mixture.
Cover and heat in Microwave Oven 20 minutes or until mixture is hot. Uncover, and heat for an additional 5 minutes.
