2 hrsThis retro Jello dessert tastes like a creamsicle in mousse form. Orange gelatin dissolved in boiling water, vanilla ice cream stirred in spoonful by spoonful until melted and smooth, then mandarin oranges layered in and chilled until set. Four ingredients, five minutes of active work.
The ice cream does two things at once. It cools the hot gelatin (so you don’t have to wait hours for it to chill) and adds a creamy richness that transforms plain Jello into something closer to a bavarian cream. The orange gelatin plus vanilla ice cream creates that unmistakable orange-and-cream flavor.
You can present this two ways: layered in a bowl with oranges alternating with the gelatin mixture for a pretty cross-section when scooped, or spread flat in a 9×13 pan with oranges arranged on top for easy serving at a potluck.
Kitchen Tips
- Soften the ice cream before adding. Rock-hard ice cream won’t melt evenly into the hot gelatin and leaves lumpy pockets.
- Add the ice cream by spoonfuls and stir after each addition. This keeps the mixture smooth and prevents the gelatin from setting in uneven clumps before all the ice cream is incorporated.
- Drain the mandarin oranges thoroughly. Excess canning syrup dilutes the gelatin and can prevent it from setting properly.
- Refrigerate at least 2 hours, or until firmly set. Cutting or scooping too early gives you a soupy mess.
Variations
- Strawberry dreamsicle: Use strawberry Jello instead of orange and layer with sliced fresh strawberries.
- Tropical version: Use orange-pineapple Jello and layer with drained pineapple tidbits alongside the mandarin oranges.
