Old Fashioned Salmon Loaf

Ingredients

2 cups salmon 7 1/2 ounces, undrained
12 each soda crackers
2 large eggs
1/2 cup milk
1 teaspoon butter melted
1/2 teaspoon dill weed dried
1 x red hot pepper sauce (eg. Tabasco) dash
4 wedges lemon

Directions

In large bowl, remove bones form salmon and mash (including juice with fork.

Crush crackers to fine crumbs; add to salmon. Mix well.

In bowl, beat eggs; mix in milk, butter, dill, hot pepper sauce and pepper to taste.

Blend into salmon mixture. Transfer to greased and wax paper lined loaf pan.

Bake in 350F oven for 30-35 min or until centre is firm to touch.

Let cool for 5 min.

Loosen edges with knife, invert onto serving platter.

Garnish with lemon.

Alpine Baked Pasta

Wow this was good, and I'm some stuffed! This dish was easy to make and bake and fill your face with. Used an italian blend of cheese that included provolone, mozzarella, parmesan and asiago. Served it up with Easy Onion & Herb Focaccia and it was a full meal. The sage made the dishes aromatic and extraordinary!
