This is the kind of pasta salad you find at every German Imbiss and family barbecue, where it sits next to the bratwurst and disappears fast. Spiral noodles trap the creamy dressing in their twists, and chunks of Swiss cheese and ham give every bite real heft. Diced dill pickles cut through the richness with a sharp, briny snap that keeps the salad from feeling heavy.

The dressing is the secret weapon. Mayo softened with a splash of liquid coffee cream (or half-and-half) gets brightened with lemon juice and tinted pink with ketchup, ending up somewhere between a thousand-island and a classic German salad sauce. Chives stirred in at the end add a soft oniony note without raw bite.

Make it ahead. The flavors deepen overnight as the noodles soak up the dressing.

Chef Tips

  • Cook noodles just to al dente. Mushy noodles can’t stand up to the dressing.
  • Cube ham and cheese the same size as the pickles so every forkful gets a bit of each.
  • Rinse cooked noodles briefly under cold water to stop the cooking and cool quickly.
  • Taste again after chilling. Cold dulls flavor, so it often needs a final pinch of salt.

Directions

  1. Cook noodles as directed;drain.

  2. Cut pickles, ham and cheese into small cubes.

  3. Mix together mayonaise, coffee creme, chives(chopped finely) and lemon juice and stir it into the rest of the salad ingredients.

  4. Let cool and taste again; salt more if nessesary.
