Dates, raisins, and chopped walnuts form the base. Molasses binds everything with a deep, almost treacly sweetness, then peanut butter goes in for richness and protein. Orange juice loosens the mixture just enough to roll into balls.
The coconut coating does more than look pretty. It keeps the balls from sticking together in the container and adds a sweet, chewy outer layer.
Let them rest for a full day before eating. That overnight sit lets the dates soften, the flavors meld, and the peanut butter firm up into a fudge-like consistency that’s completely different from the loose mixture you started with.

Directions
Combine dates, raisins and nuts in a medium sized bowl.
Stir in the molasses.
Add peanut butter, stirring until well combined. Stir in 2 tablespoons of the orange juice.
Add enough of the remaining orange juice to form a moist mixture that can be formed into balls.
Roll into ½ inch balls and roll each ball into the shredded coconut.
Store in an airtight container out of direct sunlight.
Let sit for at least 1 day before serving.
