Mom’s banana walnut wheat bread is a workhorse sandwich loaf, the kind that earns a spot in the bread machine rotation because it makes lunchboxes interesting. Half whole wheat, half bread flour, mashed bananas for sweetness, and a generous half-cup of chopped walnuts for crunch. It’s hearty enough to anchor a peanut butter sandwich and soft enough to toast for breakfast.

The honey-and-banana sweetener combo is what makes this loaf better than most. Honey alone gives a faint floral edge but doesn’t carry banana flavor. Sliced bananas alone make a moist but bland loaf. Together, they balance each other and give the bread that subtle, warm sweetness that doesn’t overwhelm a savory sandwich filling.

A tablespoon of yeast (more than typical for a single loaf) is the right amount here. Whole wheat flour and banana weight together fight the rise, so extra yeast is the workaround that keeps the loaf from coming out dense and gummy.

The author’s tip about adding walnuts at the start is worth taking. Most ABM recipes save nuts for the mix-in beep, but here the kneading paddle distributes them more evenly throughout the dough, instead of leaving big nut pockets.

Use fully spotted bananas for the best flavor and the sweetest yeast feed.

Pro Tips

  • Slice the bananas right into the bread machine pan to avoid oxidation.
  • Add ½ teaspoon cinnamon as the recipe suggests for warmer flavor.
  • Use the wheat or basic cycle, not a sweet bread cycle which can run too short.
  • Cool fully before slicing. Yeast breads continue to set after baking.

Variations

  • Sub maple syrup for honey for a deeper, more autumnal sweetness.
  • Add ½ cup raisins along with the walnuts for sweet-and-nut combo.
  • Use 100% bread flour for a softer, whiter loaf as the recipe note allows.
