Mushroom Starter Salads

Ingredients

1 tablespoon mustard powder
3 tablespoons vegetable oil
1 1/2 tablespoons wine vinegar
1 1/2 tablespoons parsley leaves finely chopped
1 1/2 tablespoons chives chopped
1 teaspoon caster sugar
12 ounces mushrooms thinly sliced

Directions

Whisk together mustard, oil, vinegar, parsley, chives and sugar.

Add mushrooms and toss.

Cover and refrigerate for 2 to 3 hours.

Spoon into dishes and serve.
