Moroccan Beef Stew

Ingredients

2 pounds beef chuck roast
1/4 teaspoon cumin
3 tablespoons flour, all-purpose
1/4 teaspoon ginger
2 teaspoons salt
1/8 teaspoon cayenne pepper
2 tablespoons vegetable oil
1 cup celery chopped
20 ounces pineapple chunks
1/2 cup onion chopped
2 c Juice/ water
2 each garlic cloves minced
1/2 teaspoon paprika
1 cup carrots sliced
1/4 teaspoon coriander
3 small tomatoes wedged
1/4 teaspoon parsley flakes

Directions

Dredge beef in flour and salt and brown in oil.

Pour off drippings.

Add spices, celery, onion and garlic.

Stir in juice and water. Cook slowly 1 hour.

Add carrots and cook 30 minutes more. Add pineapple and tomatoes and heat through.

Garning with parsley.

Australian Shrimp On The Barbie

Although the recipe looks great - and delicious - it has definitely been "Americanised" (or Americanized as the Americans would put it!). In Australia we do not call them shrimps - they are prawns. Nor do we call that herb "cilantro" - it is coriander! To tell you the truth though we don't really put prawns on the barbie (much!). they tend to toughen up more if they are on the barbie. We boil them like everyone else and then serve them with everything else cooked on the barbie. Sorry to sound all defensive about Aussie food (have we been around long enough to establish Aussie food?)It has been a long day and I just had to have a whinge about something!
