This is Mom’s corned beef hash: canned corned beef browned with onions in a little lard, mixed with diced potatoes and milk, then simmered until everything melds into a thick, savory comfort bowl. Serve it next to a pile of tender cooked cabbage and you’ve got a filling weeknight dinner from pantry staples.
It’s simple, it’s nostalgic, and it feeds four without any fuss.
Kitchen Tips
- Chill the canned corned beef before opening. Cold corned beef breaks up into clean chunks instead of smearing into paste.
- Use cooked or leftover potatoes for the fastest version, or start with raw diced potatoes and add a few extra minutes of simmer time.
- A splash of hot sauce or a dab of mustard on top gives each bowl a little extra zing.
