4 hrsThis creamy lime Jello mold is a vintage potluck staple that hasn’t lost its charm. Lime gelatin dissolved in hot water gets combined with crushed pineapple, lemon juice, and sugar, then chilled until partially thickened before cottage cheese and whipped cream are folded in.
The two-stage chilling is the whole technique here. You need the Jello thick enough to suspend the cottage cheese and whipped cream evenly throughout. Add them too early when it’s still liquid and they’ll float to the top or sink to the bottom, giving you layers instead of a uniform mold.
The lemon juice brightens the lime flavor and keeps the sweetness from being one-note. Combined with the tangy cottage cheese, it adds just enough tartness to balance all that sugar and whipped cream.
Kitchen Tips
- Check the Jello every 30 minutes while it thickens. You want it the consistency of unbeaten egg whites before adding the cottage cheese and cream
- Fold gently so the whipped cream stays fluffy. Stirring hard turns the whole thing dense
- To unmold cleanly, dip the mold briefly in warm water and invert onto a plate
- Use small-curd cottage cheese for a smoother texture throughout

Ingredients
Directions
Dissolve jello in one cup of hot water.
Combine remaining ingredients except cottage cheese and whipped cream.
Place in refrigerator.
When thick, add the cottage cheese and whipped cream.
Return to refrigerator until set.
