80 minChocolate and banana is one of those combinations that just works, and this tube cake leans all the way into it.
Devil’s food cake mix plus chocolate pudding mix create a double-chocolate base, while three mashed bananas add moisture and a subtle fruity sweetness that keeps the chocolate from being one-note. A half cup of extra flour gives the batter enough structure to hold up in the tube pan.
No frosting required. The cake is dense, fudgy, and rich enough on its own. Dust it with powdered sugar if you want to dress it up.
Kitchen Tips
- Beat the batter a full 2 minutes at medium speed. This develops structure so the cake rises evenly in the tube pan
- Let it cool in the pan for a full hour. Tube cakes are fragile when warm and will crack if removed too soon
- Mash bananas well to avoid large chunks that create wet pockets in the finished cake
- A light dusting of cocoa powder instead of powdered sugar keeps the chocolate theme going
