Eight minutes in the microwave and you’ve got a pan of chewy, butterscotch-studded bars held together by applesauce and crushed vanilla wafers. No oven required, no fussy technique, and the whole thing comes together in about 30 minutes including cooling time.

The vanilla wafer crust does double duty. Crushed into large chunks, half goes on the bottom as the base and the rest gets pressed on top as a crumbly lid. The applesauce in the middle keeps everything moist while the butterscotch morsels melt into gooey pockets throughout.

Wheat germ adds a toasty, nutty undertone and a bit of extra nutrition without changing the texture. Raisins bring little bursts of sweetness in every bite, and optional chopped nuts or sunflower seeds give you some crunch if you want it.

Let these cool for at least 15 minutes before cutting. They firm up as they set, and slicing too early gives you a crumbly mess instead of clean bars. Store leftovers in the fridge where they get even chewier and more fudge-like overnight.

Directions

Spray the bottom of an 8×8 inch glass pan or a 9 inch glass pie pan with cooking spray.

Crush the wafers into large chunks.

Put half the wafers in the pan.

In a bowl, mix the raisins, butterscotch morsels, wheat germ and applesauce.

Add the nuts or sunflower seeds if desired.

Spread over the wafers in the pan.

Press the remainder of the wafers evenly over the applesauce mixture.

Microwave for 8 minutes. Let cool for at least 15 minutes before cutting into bars.

Store any leftovers in the refrigerator.
