Mexican Meatloaf

Ingredients

1 pound ground beef, lean
1 pound ground veal
3/4 cup black olives pitted, coarsely chopped
1/2 cup cornmeal
2 large eggs lightly beaten
1 medium onion chopped
1/4 cup jalapeno peppers pickled
2 large garlic cloves chopped
1 teaspoon chili powder
1 teaspoon oregano dried
1 teaspoon salt

Directions

Preheat oven to 350 degrees F.

Combine all ingredients in large bowl (hands work best for mixing) Gently pack mixture into greased 9x5x3 inch loaf pan.

Bake for 1 1/4 hours or just until cooked through.
