Banana date butter is a refrigerator spread that punches well above its short ingredient list. Dried dates get softened in orange juice in the microwave, which both rehydrates them and pulls a little citrus into the sticky base, then everything goes into the food processor with a ripe banana, a knob of butter, and fresh lemon juice.

The small whole-fat butter ratio is the secret to texture. Just one tablespoon emulsifies the date paste so it spreads like fruit butter instead of clumping like puree. Skip it and you get a thick, dense lump that won’t smooth onto toast.

Leave it slightly chunky. The recipe specifically calls for visible flecks of date, which give the spread little chewy pockets of caramelized sweetness against the smooth banana base. A fully smooth puree is fine but loses that contrast.

Use Medjool dates if you can find them. They’re plumper and sweeter than the smaller Deglet Noor variety and give the spread a richer, almost toffee-like depth.

Kitchen Tips

  • Cool the dates before blending. Hot dates will melt the butter into a slick instead of emulsifying it.
  • Press plastic wrap onto the surface before refrigerating. Air browns the banana on top within an hour.
  • Bring to room temp before serving. Cold spread tears soft bread.
  • Use this in place of jam on a peanut butter sandwich for a sweeter twist.

Variations

  • Add ½ teaspoon cinnamon and a pinch of cardamom for a warming spiced version.
  • Stir in 2 tablespoons toasted chopped pecans after blending for crunch.
  • Sub maple syrup for the orange juice for a deeper caramel flavor.

Directions

Combine the dates and the juice in a 2 cup measure and cover, microwaving on full power until the dates are soft, about 3 minutes. Let them cool, uncovered, for about 2 minutes.

Then tip them into a processor or a blender along with the banana, butter and lemon juice and whiz until the texture is smooth but flecks of date still remain.

Serve at room temperature or chilled on waffles, whole-wheat English muffins or rice cakes.

Stored covered and refrigerated for up to four days; makes ⅔ cup.
