A dump-and-start bread machine loaf that fills the kitchen with the warm smell of honey and toasted oats. Load the pan, press a button, and walk away.
The rolled oats give this bread a slightly chewy, nutty texture that plain white bread can’t touch. Quick or old-fashioned oats both work, but old-fashioned will leave more visible oat flakes in the finished slice. Three tablespoons of honey adds gentle sweetness without turning this into dessert bread, and the powdered skim milk enriches the crumb, making it softer and helping the crust brown evenly.
One small detail that matters: the water needs to be around 80°F (27°C). Too hot and you’ll kill the yeast before the machine even starts its cycle. Too cold and the dough rises sluggishly. Lukewarm from the tap is usually just right.
The recipe gives you two yeast options: 2 teaspoons active dry or 1 ½ teaspoons fast-rising. Use whichever you have on hand, and match it to your machine’s cycle. Basic for active dry, Basic Rapid for fast-rising.
