Light whole wheat bread for the bread machine, blending whole wheat with bread flour for a soft sandwich loaf with molasses sweetness. A no-knead loaf using the wheat cycle.

50 minA 50/50 blend of whole wheat and bread flour makes for a sandwich loaf with the nutty wheat character but without the dense, brick-like crumb pure whole wheat tends to give. The bread flour brings the gluten that whole wheat lacks, lifting the loaf into a tender slice that holds together for sandwiches and toast.
Molasses is the key sweetener here. It feeds the yeast and adds a subtle dark, malty note that brings out the earthiness of the wheat. Honey or brown sugar work in a pinch but won’t give the same depth.
Layer the ingredients in the order your machine recommends. Most bread machines want liquid first, then dry ingredients, with the yeast last in its own holder so it stays separate from the salt until the cycle starts. Salt kills yeast on contact.
Use the whole wheat cycle, not the basic. Whole wheat flour absorbs water more slowly and needs the longer rise times built into that program.
Pro Tips
- Bring water to about 110F (43C). Cold water sluggish the yeast, hot water kills it.
- Don’t peek through the cycle. Lifting the lid drops the temperature and can deflate the rise.
- Add a tablespoon of vital wheat gluten for an even softer crumb if your loaf comes out dense.
- Cool the loaf on a wire rack at least 20 minutes before slicing. Cutting hot bread compresses the crumb.
Variations
- Stir in a quarter cup of rolled oats plus an extra splash of water for an oatmeal-wheat version.
- Add a tablespoon of caraway seeds for a Russian-style brown bread lean.
- Swap molasses for honey if you prefer a milder, sweeter loaf.

Add liquid ingredients.
Close cover and place dry yeast into the yeast holder.
