Lentil Rice Burgers

Ingredients

1/2 cup rice white, cooked, cooled
1/2 cup lentils cooked
1 small sweet potatoes, or yams peeled, cooked, minced
8 each spinach leaves rinsed, blanched, finely shredded
1/2 cup mushrooms fresh, chopped
1 teaspoon soy sauce low sodium
1 x salt and black pepper to taste
1/2 cup bread crumbs dry
1 tablespoon cilantro finely chopped

Directions

Combine rice, lentils, sweet potato, spinach and mushrooms in a large bowl.

Add soy sauce, salt and pepper.

Add bread crumbs and cilantro and mix well.

Refrigerate.

Form mixture into 6 to 8 patties.

Oil a vegetable grill generously--these patties tend to stick.

Grill for 3 to 4 minutes on each side, until medium brown.
