Stovetop-popped popcorn tossed in melted butter mixed with fresh lemon juice and grated lemon zest. The citrus cuts through the butter’s richness and gives each kernel a bright, tangy zing that makes plain buttered popcorn taste boring by comparison.

The stovetop method delivers bigger, crunchier popcorn than microwave bags. Heating the corn oil until it smokes, testing with a single kernel, then adding the rest and shaking creates evenly popped corn with fewer duds at the bottom of the pot.

Mixing the lemon juice into the melted butter before tossing is key. The butter carries the lemon flavor and coats each kernel evenly. Lemon juice alone would just pool at the bottom of the bowl. The zest goes on separately and clings to the butter-coated surface, adding concentrated citrus oils you can smell before you even take a bite.

Kitchen Tips

  • Use fresh lemon juice and zest, never bottled. Fresh has a sharper, brighter flavor that bottled can’t match.

Directions

In a large heavy pot, heat corn oil over high heat until the oil smokes.

Add 1 kernel popping corn and heat until kernel pops.

Add rest of popping corn, cover pot, and shake gently until corn starts to pop.

Shake vigorously until popping subsides.

Remove from heat.

Mix lemon juice with melted butter.

Toss popcorn with lemon zest, salt, and butter/lemon juice.
