Some of the best vegetable sides don’t require a recipe so much as a method. Roma tomatoes halved, laid cut-side up, and dusted with a light mixture of fine breadcrumbs, grated Parmesan, and dried thyme. Into the oven for 15-20 minutes.

That’s it. But what happens in those 20 minutes is worth understanding. The cut side of the tomato softens and concentrates as moisture evaporates. The breadcrumb-Parmesan layer on top absorbs the rising heat and the tomato’s own steam, crisping where it contacts the surface and forming a crust where the cheese browns.

Roma tomatoes are specified for a reason. Their lower water content means they hold their shape and don’t collapse into a puddle of liquid the way a beefsteak or heirloom tomato would. They also have a higher flesh-to-seed ratio, which means more surface area for the topping to rest on.

Serve alongside grilled fish, roasted chicken, pasta, or eggs. This is the side dish that gets along with everything.

Kitchen Tips

  • Use Roma tomatoes: Lower moisture content means they hold their shape. Juicier varieties will turn watery and soft.
  • Cut side must be up the whole time: This is what allows the crumb topping to brown and the tomato to concentrate rather than stew.
  • Fine breadcrumbs only: Coarse crumbs won’t adhere to the tomato surface and will slide off. Fine crumbs form a proper crust.
  • Watch at 15 minutes: Roma tomatoes vary in size. Smaller ones finish quickly; larger ones may need the full 20 minutes.

Variations

  • Add garlic: A pinch of garlic powder mixed into the breadcrumbs adds an extra layer of savory flavor.
  • Fresh herbs: Swap dried thyme for fresh oregano or basil leaves scattered over the top after baking for a brighter, fresher finish.

Directions

Cut each tomato in half and arrange cut side up on a baking dish . Sprinkle each half lightly with bread crumbs, parmesan cheese and thyme. Bake for 15 to 20 min.
