This is the kind of dip that vanishes first at every party. Layers of refried beans, mashed avocado, taco-seasoned sour cream, sharp cheddar, and chopped fresh tomatoes stacked in a dish and served with chips. No cooking, no oven, no stress.

The yogurt mixed into the sour cream layer is a smart move. It lightens up what could be a heavy dip and adds a tang that plays well with the taco seasoning. You get that creamy, spiced layer without it sitting like a brick in your stomach halfway through the bowl.

Spread the refried beans in an even layer on the bottom. They’re the foundation that holds everything together and gives each chip scoop some substance. Mashed avocado goes next, acting as a buffer between the beans and the creamy layer so the textures stay distinct.

Pro Tips

  • Spread each layer to the edges of the dish so every chip scoop gets all the layers. The biggest disappointment is a bite with only beans.
  • Use ripe avocados that give slightly when pressed. Underripe ones won’t mash smoothly and taste grassy.
  • Let the yogurt-sour cream mixture sit with the taco seasoning for 5 minutes before spreading. The spices bloom and the flavor deepens.
  • Assemble no more than an hour before serving. The avocado layer browns if it sits too long exposed to air.

Variations

  • Seven layer style: Add a layer of sliced black olives and chopped green onions on top of the tomatoes.
  • Spicy version: Fold diced jalapenos or canned green chiles into the avocado layer for heat.
  • Greek twist: Swap refried beans for hummus and use feta instead of cheddar for a Mediterranean spin.
