This is essentially a from-scratch Kahlua: a rich coffee-sugar syrup spiked with 100-proof vodka and infused with whole vanilla bean for two weeks until the flavors marry into something deep, warm, and dangerously sippable.
Start by dissolving instant coffee crystals and sugar into heated water, stirring until completely clear. Cooling the syrup to room temperature before adding the vodka is critical; hot liquid will cook off the alcohol and leave you with sweet coffee water instead of liqueur. Once everything is combined, split your vanilla beans lengthwise and drop half a bean into each bottle. This exposes the tiny seeds inside, which release far more flavor than a whole, unsplit bean would.
After two weeks of steeping, strain out the vanilla bean and rebottle. The liqueur will be dark, glossy, and intensely flavored. It keeps for months at room temperature.

Mix water, sugar and coffee crystals.
Heat and stir until dissolved.
Cool to room temperature.
Add vodka. Pour mixture into 4 bottles.
Cut vanilla bean in half lengthwise and drop half a bean into each bottle.
Cap. After 2 weeks strain, remove bean and rebottle.
If regular coffee keeps you awake nights; make with decafinated.
