Frozen hash brown potatoes turned into something special in 20 minutes flat, all in the microwave. Green onions and Italian seasoning cook in margarine first to build a fragrant herb butter, then the frozen potatoes go in and heat until tender. A toss with Parmesan at the end coats every piece.

This is a breakfast or brunch side that requires almost no effort. The microwave does what the oven would take 45 minutes to accomplish, and the result is surprisingly good for something made from frozen potatoes.

The herb butter base is key. Cooking the green onions with margarine, parsley, and Italian seasoning for 90 seconds in the microwave blooms the dried herbs and softens the onions. This concentrated herb mixture coats the potatoes as they cook, infusing flavor into every piece.

Directions

In a 1-quart microwave safe casserole stir together green onions, margarine, parsley flakes, Italian seasoning and salt.

Cook, covered on high, or 100% power for 1 2/2 minutes or until onions are tender.

Stir in frozen potatoes.

Cook, covered, on high for 5 to 7 minutes or until heated through, stirring once.

Add parmesan cheese; toss to coat.
