Irish coffee done right is all about the layers, and this recipe nails the details that most skip. Warm the glass first with hot water so the coffee stays hot. Dissolve the sugar in a small splash of coffee before adding the whiskey. Then fill the glass and float the cream on top without stirring. That layering is the whole point.

Sliding the whipped cream over the back of a spoon is the traditional technique, and it works because it breaks the fall. The cream spreads across the surface in a thick, even layer instead of plunging to the bottom. You drink the hot, sweetened whiskey-coffee through the cold cream, and that temperature contrast is what makes Irish coffee special.

Strong coffee is a must here. The whiskey and sugar need something bold enough to stand up to them. A weak brew will taste watery and boozy. Use a dark roast or brew it stronger than you normally would.

Pro Tips

  • Pre-warming the glass prevents thermal shock that can crack it, and keeps the coffee hot longer. Don’t skip this step.
  • Use freshly whipped cream, lightly whipped so it’s still pourable. Stiff peaks won’t float properly.
  • Do not stir after adding the cream. The whole experience depends on sipping through the layers.
  • Irish whiskey specifically. Scotch, bourbon, or other spirits will make a different drink entirely.

Variations

  • Baileys Irish coffee: Add a splash of Irish cream liqueur alongside the whiskey for a richer, sweeter version.
  • Brown sugar: Swap the white sugar for brown sugar or demerara for a deeper, more caramel-like sweetness.
  • Decaf evening version: Use strong decaf coffee for an after-dinner drink that won’t keep you up all night.

Directions

  1. This recipe may be served in either Irish coffee goblets or Heat each goblet or mug by putting a metal spoon in the empty goblet and pouring hot water onto the spoon and then into the goblet. Pour out water.
  2. Put a teaspoon of sugar into each goblet. Add enough coffee to dissolve the sugar; stir. Add a jigger of Irish whiskey to each goblet, then fill goblet within an inch of the brim with more coffee.
  3. Slide each spoonful of whipped cream over the back of a DO NOT STIR. Serve at once.
