Hot water and instant coffee crystals get heated together in a measuring cup until steaming, then Irish whiskey and brown sugar stir straight in. Pour into mugs, top with whipped cream, done.
Brown sugar is the quiet upgrade over white in this version. The molasses notes complement the malted character of Irish whiskey better than refined sugar can, and they round out the slight bitterness of the instant coffee. Dissolve fully before topping with cream.
The whipped cream finish is non-negotiable for a proper Irish coffee. Traditionally the cream is whipped to a thick float that sits on top, and you drink the hot whiskey-coffee through the cold cream. Pressurized dessert topping works in a pinch, but lightly whipped fresh heavy cream (just to soft peaks, then poured slowly over the back of a spoon) gives the right thick float every Irish bartender will tell you is the difference between Irish coffee and ‘just coffee with whiskey'.
