10 minThis Irish coffee skips the espresso machine and the brewed-pot routine in favor of instant coffee crystals heated in the microwave. The result tastes nearly identical to the bar version, made in 10 minutes with pantry staples.
The traditional Buena Vista Café Irish coffee uses brewed coffee, but instant works surprisingly well here because the whiskey and brown sugar mask any subtle flavor differences. What you’re really tasting is the warm boozy combination of whiskey, sweet caramel notes from brown sugar, and the cool slip of cream on top.
Brown sugar instead of white sugar is the small but meaningful detail. The molasses notes in brown sugar amplify the caramel and toffee notes in Irish whiskey, while white sugar adds only sweetness without depth.
Don’t stir the whipped cream into the coffee. Float it on top so each sip pulls the hot whiskey-coffee through the cool cream layer. Stirring it in makes a watery latte; floating it preserves the textural drama of the drink.
Pro Tips
- Heat the water just to steaming, not to a rolling boil. Boiling water dilutes the whiskey too much when added and can scorch the coffee crystals.
- Use a real Irish whiskey like Jameson, Bushmills, or Tullamore Dew. Scotch or bourbon will taste off in this drink.
- Whip your own cream to soft peaks (not stiff) so it floats well and slides into the coffee as you drink. Pressurized whipped cream from a can also works in a pinch.
- Warm the mugs first by filling with hot tap water for a minute, then dumping. A cold mug pulls heat fast and the drink turns lukewarm before you finish.

Micro-cook, uncovered, on 100% power about 4 minutes or just until steaming hot.
Stir in Irish whiskey and brown sugar.
Serve in mugs. Top each mug of coffee mixture with some pressurized dessert topping.
