These indoor s’mores turn Golden Grahams cereal into a crunchy, chocolate-coated base, then fold in mini marshmallows that stay soft and pillowy against the crispy cereal. Press into a pan, let them set, and cut into squares. All the flavors of a fireside s’more without leaving your kitchen.
The chocolate sauce comes together fast: corn syrup, butter, and milk chocolate morsels boiled together until smooth. Working quickly after you pour it over the cereal is important because the mixture stiffens as it cools. Toss until every piece is coated before the chocolate has a chance to set.
Folding in the marshmallows one cup at a time keeps them from clumping into one sticky mass. You want marshmallows distributed evenly so every square gets that gooey pocket when you bite through the chocolate-coated crunch.
Kitchen Tips
- Work fast when coating the cereal. The chocolate mixture firms up quickly at room temperature. Have your cereal measured and ready in the bowl before you start heating.
- Use waxed paper to press the mixture into the pan. Your hands will stick to the marshmallows otherwise, and you’ll pull the bars apart instead of compacting them.
- Let them set the full hour. Cutting too early means the bars crumble and fall apart. Patience here means clean, neat squares.
Variations
- Dark chocolate version: Swap milk chocolate morsels for semi-sweet or dark chocolate. The bitterness balances the sweet marshmallows and corn syrup.
- Peanut butter drizzle: Melt a few tablespoons of peanut butter and drizzle over the top before the bars set for a Reese’s-style twist.

Grease a 13×9×2” rectangular pan.
Heat corn syrup, butter and chocolate morsels to boiling in 3- quart saucepan, stirring constantly; remove from heat.
Stir in vanilla. Pour over cereal in large mixing bowl; toss quickly until completely coated with chocolate.
Fold in marshmallows, 1 cup at a time.
Press mixture evenly in pan with piece of waxed paper.
Let stand until firm, at least 1 hour.
Cut into 1½ inch squares.
