Spiked hot white chocolate made with real white chocolate, brandy or rum, egg yolks, and scalded milk. A rich, creamy after-dinner drink for cold nights.

This isn’t the packet-mix hot cocoa you make for the kids. Real white chocolate melts in a double boiler with brandy (or rum, your call) and vanilla until it’s a smooth, boozy pool. Egg yolks whisked in off the heat give it the body of a custard.

Scalded milk goes in last, poured slowly over the chocolate while you stir constantly. That slow pour is what keeps everything emulsified and silky. Rush it and the white chocolate can seize into grainy clumps.

The result is closer to a drinking custard than a typical hot chocolate. It’s thick, creamy, and carries just enough alcohol warmth to feel like dessert and a nightcap rolled into one.

Pro Tips

  • Use good-quality white chocolate with cocoa butter listed as the first fat ingredient. Cheap white chips use palm oil and won’t melt as smoothly.
  • Keep the double boiler over medium heat, not high. White chocolate scorches easily and turns grainy once it does. There’s no fixing it.
  • Scald the milk until tiny bubbles form at the edges, then pull it immediately. Boiled milk develops a skin and can curdle when it hits the chocolate.
  • Serve right away in warmed mugs. This drink thickens as it cools, and reheating risks scrambling the egg yolks.

Variations

  • Use dark rum instead of brandy for a more tropical, molasses-tinged drink.
  • Add a pinch of cinnamon or a scrape of fresh nutmeg on top for a spiced version.
  • Float a spoonful of whipped cream on each mug and dust with white chocolate shavings.

Directions

Place chocolate, brandy/rum and vanilla in the top of a double boiler filled with boiling water, place over medium heat and cook until chocolate is melted.

Remove from heat, but leave melted chocolate in the double boiler.

Add the yolks and mix until incorporated.

Meanwhile, place milk in a small pot over medium heat and scald it.

Immediately remove from heat and slowly pour over the melted chocolate, stirring constantly.

Pour into mugs and serve immediately.
