Hot and Sour Seafood Soup (Thai)

Ingredients

1/2 pound shrimp small, fresh, shelled, deveined
2 quarts chicken broth
2 each serrano chiles green , seeded and chopped
1 teaspoon salt
1 gram lime zest
4 x kaffir lime leaves
3 x lemon grass stalks, cut
1/2 pound scallops
2 tablespoons fish sauce
3 each lime juice
3-4 tablespoons cilantro fresh
1 x serrano chiles red, seeded, silvered
6 x mushrooms, shitake
2 each scallions, spring or green onions julienne

Directions

Combine shrimp shells with stock, chilies, salt, lime, zest, lime leaves and lemongrass stalks in heavy non-aluminum pot.

Bring to a boil, reduce heat, cover and simmer for 20 to 25 minutes.

Strain.

Return liquid to pot and place over medium-high heat and bring to a boil.

Add shrimp and scallops and cook for 1 minute. Stir in fish sauce and juice of limes.

Add chopped cilantro, slivered red chili and shiitake slices, and green onions.

Stir and pour into a tureen or ladle into individual bowls.

Baked Chicken Breasts (Crockpot)

If you want tender juicy chicken this is it. I used Merlot Wine in lieu of Sherry and thigh meat instead of breast and it really came out great.
