Two-ingredient honey butter spread made with softened butter and honey. Sweet, simple, and ideal for toast, biscuits, cornbread, and grilled sandwiches that need quick browning.

Two ingredients. Stir. Done. Honey butter is one of those recipes that barely qualifies as a recipe, but having it written down means you get the ratio right every time: ¼ cup softened butter to 1 tablespoon of honey.

The honey does more than sweeten. It changes the texture of the butter, making it smoother and more spreadable even when cold. A thin layer on warm toast, a split biscuit, or a slab of cornbread adds a floral sweetness that plain butter just doesn’t have.

One thing to know: honey promotes browning. If you’re using this on a grilled sandwich or panini, the bread will turn golden faster than with regular butter. That’s a plus for sandwiches that just need to heat through (like ham and cheese), but it can be a problem for egg sandwiches or anything that needs longer cooking time. The bread can scorch before the filling is done.

This batch covers 8 slices of bread, which is about right for a family breakfast or a round of biscuits. Double it if you’re making cornbread for a crowd.

Chef Tips

  • Use room temperature butter. Cold butter won’t blend smoothly with the honey and you’ll get streaks instead of a uniform spread.
  • Store leftovers in the fridge. It firms up but softens quickly at room temperature. Pull it out 10 minutes before you need it.

Variations

  • Cinnamon honey butter: Add ¼ teaspoon of cinnamon for a warm, spiced version that’s incredible on pancakes and waffles.
  • Whipped honey butter: Beat the mixture with a hand mixer for 2 minutes until light and fluffy for a restaurant-style spread.

Because the honey promotes browning, use this on pockets which only have to brown and heat through.

If used on egg sandwiches, etc. the bread may over brown before the egg finishes cooking.
