Got leftover holiday turkey? Put it to delicious use in this cozy casserole, tender turkey in a creamy sauce with red pepper, mushrooms, and spinach, crowned with a ring of homemade garlic biscuits baked until golden.

The filling more or less makes itself: butter, flour, broth, and milk thicken into a creamy sauce right in the casserole as it bakes, no separate pot needed. The spinach goes in at the end so it stays bright and just-wilted.

The biscuits are the crowning glory, and they reward a light hand. Cut cold butter into the flour until it looks like small peas, add just enough milk to bring the dough together, and knead it only a few times, since overworking makes biscuits tough instead of flaky.

Arrange them around the edge so the filling bubbles up in the middle, then bake until they’re puffed and golden. It’s holiday comfort that actually makes leftovers something to look forward to.

Kitchen Tips

  • Keep the butter cold and cut it into the flour until pea-sized for the flakiest biscuits.
  • Knead the biscuit dough only 5 to 7 times. Overworking makes them tough.

Directions

Heat oven to 400℉ (200℃).

Heat butter in 2-quart casserole in oven until melted.

Stir in remaining ingredients except spinach and Biscuits.

Bake 20 minutes, stirring once, until sauce is slightly thickened.

Stir in spinach.

Meanwhile prepare biscuits.

Cut butter into flour, baking powder and garlic salt with pastry blender until mixture resembles small peas.

Stir in just enough milk until dough forms a ball.

Knead on lightly floured surface 5 to 7 times.

Roll or pat dough ½ inch thick.

Cut with floured 2 inch cutter.

Place around edge of casserole, overlapping biscuits slightly to fit.

Increase oven temperature to 425 degrees F. Bake 15 to 20 minutes longer or until biscuits are golden brown.
