2 hrsThis bread machine loaf brings the flavors of Hawaii into every slice. Shredded coconut, crushed pineapple, macadamia nuts, and pineapple juice all go into the dough, creating a bread that smells like a tropical bakery while it rises.
The pineapple does double duty here. Crushed pineapple adds fruity sweetness and moisture to the crumb, while the reserved juice replaces most of the liquid in the dough. That means pineapple flavor is baked into the bread itself, not just sitting on top as a garnish.
Macadamia nuts give each slice a rich, buttery crunch, though almonds work too if macadamias aren’t in the budget. The shredded coconut softens during baking and threads throughout the bread, adding chewiness and a subtle tropical sweetness.
You can let the bread machine do everything on the white bread setting, or pull the dough after the second knead, divide it into two small loaves, and bake in the oven for a more traditional shape with a better crust.
Kitchen Tips
- Drain the crushed pineapple thoroughly and measure the juice separately. Too much moisture will make the bread gummy.
- All ingredients should be at room temperature before adding to the machine. Cold butter and eggs slow the yeast and give you a dense loaf.
- If baking in the oven, let the dough rise until fully doubled before baking. Rushing the rise gives you a heavy, underproofed bread.
- The bread machine version will have a softer crust. The oven method gives a golden, slightly crisp exterior.
Variations
- Add ¼ cup of dried mango or papaya pieces for even more tropical fruit flavor.
- Swap macadamia nuts for toasted cashews for a similar richness at a lower price point.
- Brush the tops with a pineapple glaze (powdered sugar + pineapple juice) after baking for extra sweetness.

Directions
Add all ingredients in the order listed to the pan of bread machine.
Select white bread and press Start.
NOTE: Unless otherwise noted all ingredients should be at room temperature.
This can be mixed on manual of the bread machine.
After Second kneading, remove dough from machine, divide into to equal portions and place in small loaf pans.
Cover and let rise to double, about 45 min to 1 hour.
Bake at 350℉ (180℃) for 35 to 40 min.
