Where a traditional guacamole leans on lime, cilantro and onion, this version uses lemon, grated onion and chili powder, plus that creamy salad dressing for body. The result is milder, smoother and surprisingly addictive.
The sealing trick is the smartest part of the recipe. Spreading the Miracle Whip across the top of the dip and sealing it to the edges of the bowl creates an airtight barrier. Without oxygen, the avocado underneath stays bright green for hours instead of browning into the dull olive color that ruins a typical guacamole on a buffet table.
Don’t mash the avocado too smooth. Leaving some chunky bits gives texture that contrasts with the creamy dressing once it’s mixed in. The 2-hour chill is essential. It firms up the dip, melds the flavors and gives the dressing time to fully integrate when stirred in.
