Mayo in guacamole is a controversial move, but here’s why it works: a small amount adds richness, stretches the avocados, and slows oxidation so the dip stays green for longer in the fridge. Purists will balk, party hosts will thank you.

Lemon juice over lime is a deliberate swap. Lemon is brighter and less floral, letting the onion and chili come through cleaner without the slight bitterness lime can carry.

The order matters. Mince the onion and aromatics first so they break down evenly into the dressing, then pulse in the avocado last. If you add everything at once, you end up with avocado puree and onion chunks rather than the right texture.

Pulse, don’t run. Two or three quick pulses is the sweet spot for that lumpy, cottage-cheese consistency. Over-process and it turns to baby food.

Chef Tips

  • Pick avocados that yield slightly to gentle pressure. Rock-hard ones won’t blend cleanly, mushy ones go gray fast.
  • Press plastic wrap directly onto the surface before refrigerating to keep it from browning.
  • Adjust salt at the end, the mayo already carries some.
  • Serve with warm tortilla chips and a few extra crushed red chilies on top for color.

Variations

  • Stir in chopped fresh cilantro and a clove of minced garlic for a more traditional finish.
  • Swap mayo for Greek yogurt or sour cream for a tangier, lighter version.
  • Fold in diced tomato and a pinch of cumin after pulsing for a chunky pico-style guac.

Directions

Put the metal blade chopping in your food processor, then place the onion, lemon juice, mayonnaise, chili peppers and salt in the work bowl.

Run the processor nonstop for 10 seconds. The onion should be minced, and the other ingredients blended together.

Use a tablespoon to scoop out large chunks of avocado into the work bowl.

Clean out each avocado shell as thoroughly as possible. Distribute the chunks of avocado around the chopping blade of the food processor.

Pulse process two or three times, until the mixture is churned, but lumpy (like cottage cheese).
