Godiva Irish Freeze is a two-ingredient chocolate-and-Irish-cream cocktail served over crushed ice in a rocks glass or snifter. Dessert in a glass, ready in under a minute.

This is the easiest after-dinner cocktail in the book, a two-pour sipper for when company arrives unannounced. Godiva chocolate cream liqueur carries the cocoa backbone, Irish cream (Baileys or a generic stand-in) adds its signature whiskey-and-dairy warmth.

Crushed ice is a must here, not cubes. Cubes chill too slowly and pool at the bottom, while crushed ice melts evenly to dilute and freeze the drink into a frosty, almost slushy texture. A snifter trapping the aromas in the bowl is the traditional serve.

Both liqueurs are dairy-based and separate slightly when poured over ice. Give it a gentle stir with a bar spoon before sipping, or pull a straw through. Aggressive stirring bruises the cream.

Serve ice cold. Warm liqueurs taste cloying, while cold ones pull forward the chocolate and roast notes.

  • Chill the glass in the freezer 10 minutes before building the drink to extend that frozen window.
  • Use fresh crushed ice, freezer ice picks up food odors fast.
