Salsa cruda means raw salsa, and that’s exactly what makes this one sing.

Every ingredient is fresh, hand-chopped, and tossed together in a bowl: ripe tomatoes, creamy avocado, sharp red onion, spicy jalapeno, and crisp green bell pepper.

A pinch of sugar balances the acidity of the tomatoes while the flavors mingle during a one-hour rest.

Scoop it up with tortilla chips, spoon it over grilled fish, or pile it onto tacos.

Kitchen Tips

  • Use a nonaluminum bowl for resting. Aluminum can react with the acid in the tomatoes and jalapenos, giving the salsa a metallic taste.
  • The one-hour rest is worth the wait. That’s when the juices mingle and the flavors really come alive.
  • Dice everything to a similar size for the best texture in every bite.

Directions

Chop each vegetable by hand or with food processor.

Mix together in a nonaluminum bowl.

Add the sugar and salt to taste. Adjust the sesonings if necessary. Let the salsa sit for at least 1 hr. Stir well before serving. Yield: Approx. 2 cups
