Who says gingerbread cookies have to wreck your healthy eating goals? This whole wheat version packs in fiber from bran while artificial sweetener keeps the sugar count low.

Orange juice adds brightness and helps bind the dough without extra fat, while ginger, cinnamon, and allspice deliver all the warm spice you crave.

The cookies bake up crisp and snappy, perfect for decorating with the kids or packing in lunch boxes without the sugar crash.

At just a fraction of the calories of traditional gingerbread, you can actually enjoy a cookie (or three) without the guilt.

Directions

Heat oven to 350℉ (180℃).

Mix flour, salt, baking powder and baking soda, bran and spices together, then rub in margarine until the mixture resembles fine breadcrumbs.

Stir the sweetener into the egg and orange juice and beat into the flour mixture.

Knead well, and roll out thinly on floured board. Using a cutter, cut into gingerbread men shapes (or other shapes) and place on greased cookie sheets.

Bake for 15 to 20 min or until crisp and lightly browned.

Cool on a wire tray and store in an airtight container.
