Spice Cookies

Ingredients

1/2 cup butter or margarine
1/4 cup vegetable shortening
1 cup brown sugar firmly packed
1 large egg
1/4 cup molasses
2 1/2 cups flour, unbleached all-purpose not sifted
1/4 teaspoon salt
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves, ground
1/2 teaspoon allspice ground

Directions

Cream butter, shortening, and brown sugar thoroughly.

Blend in egg and molasses.

Sift together the remaining ingredients. Stir into sugar mixture.

Shape dough into 3/4-inch balls. Place 2 inches apart on greased baking sheets.

Flatten each ball with the bottom of a glass that has been greased and dipped into sugar.

Bake in preheated 350 degrees F. oven for 12 to 15 minutes.

Cool cookies on racks and store in airtight tins.

Dark Christmas Cake

So far so good. Have tasted it after one week. (I know! It's too soon but could not wait.) Did not put in the figs and added walnuts and pecans (big time). Tripled the brandy for soaking the fruit and nuts. Wrapped all of the cakes with 4 layers of cheese cloth soaked in brandy, then wrapped in foil. I am turning the cakes weekly to keep the juices flowing through the cake (my Mom told me about that one. Some of her cakes were aged up to 5 years.). After about 8 weeks turn them once a month for 4 months, then they should be ok. Always check about every 4 months to see if the cheese cloth is dry. If so, give it another brandy soak.
